The production of virgin olive oil starts with farmers picking the olives during the harvest season. The olives are then cleaned and separated from the branches and leaves. The next strop consists of grinding the olives to form a paste that is then pressed to release the oil. To make sure there is no impurities, the oil is left in a tank for one to two days.
